Meet Jane. Jane loves vegetables (or, if she’s pretending to be a classy broad from the UK, “veg”). A seasoned traveler, Jane has learned over the years how to incorporate her love of leafy greens, fruits and root vegetables into her trips as well as her daily life. See how a veggie lover like Jane spends a day while vacationing in rainy, eco-friendly Portland.

7:03 am: Dreams of slow dancing with Carlo Petrini are rudely interrupted when Jane’s alarm clock goes off.

She sighs.
Rolls over.
Sees that it is light outside.
Does what 97% of people wish they could do every morning and goes back to sleep.

8:25 am: Heads out to enjoy the city after putting her valuables in her travel safe.

8:32 am: Whole-wheat and banana pancakes for breakfast at Cup & Saucer. They’re so delicious Jane forgets they’re also healthy. Almost.

10:11 am: Inspired by her pancake breakfast (and what feels like a serious lack of potassium in her diet), Jane heads to the Farmer’s Market and buys a banana for a snack. Jane, who knows the perils of traveling with bananas, pops it into her trusty Banana Bunker, eliciting jealous stares fromĀ  fellow shoppers.

12:47 pm: Jane flies the hippie-veggie-flag proudly and eats a picnic lunch in Waterfront Park. It’s no challenge to whip up a plate of carrots, cucumber and broccoli when you’re armed with your trusty vegetable peeler. It always surprises Jane that so few people travel with one.

As useful as a Leatherman 830039 New Wave Multitool with Leather Sheath? No.

But still surprisingly handy? Yes.

3:23 pm: She’s a girl, she’s on vacation, what’s Jane to do but go shopping? Not surprisingly, her veggie-tastes extend to footwear as well as food. A little hole-in-the-wall shop leads to her discovery of MooShoes, a surprisingly cute (and vegan) line of footwear. Jane the veggie-enthusiast is excited about their earth-friendly practices, while Jane the chronic huncher gets excited about their claim to improve posture.

As she slings her reusable tote bag over her back (now heavy with bananas, shoes and treasures from the farmer’s market), Jane reflects that the day has been a success.

    As a veggie-loving traveler, I always pack a spice kit so I can make food anywhere and make it interesting! You can buy one pre-made or make your own with mini-ziplock baggies or whatever else you can think of. I include things like garlic, nutmeg, paprika, wasabi, basil, onion, cinnamon, curry, oregano, cayenne, salt, pepper, soy sauce, and Tobasco. That way, you can make the same simple veggie stir fry over and over while you’re traveling and always make it taste different!
