Pork is skewered and slowly cooked on a vertical rotisserie; a pineapple and an onion crown the meat and their juices flow down the meat as it cooks, giving it both a sweet and tangy taste.
It's fun to watch the chef briskly shave off the slices for your order, which includes small tortillas, chopped onions and cilantro, and carmelized pineapple. Tacos Los Tarascos is not a fancy restaurant but definitely has good food. You can sit inside but better to sit at one of the sidewalk tables; it's cooler there and the pedestrians walking from bar to bar on the Costera are endlessly fascinating to watch.
