- Whether you come to this former pasha's palace for a meal under the shade of large palm and jacaranda trees or for a Moroccan fine-dining experience inside the gold-cushioned Moroccan salon, you'll walk away happy. Although the Hotel Palais Salam is regularly overrun with tour groups, there seems to be enough space for everyone when it comes meal time. Maître d' Sarami Mohammed has been personally setting the standard for excellent service here for the past 15 years, and it's refreshing in a country where other restaurants are less enthusiastic about their service. Choose from either an extensive international menu -- with dishes ranging from a Neapolitáne risotto to a beef filet in pepper sauce -- or from the Roudhane restaurant's four-course Moroccan menu du jour with standards such as harira soup and couscous aux sept légumes offered alongside specialties such as tomate monégasque (baked tomato stuffed with rice).
