Chez Maxime - Aix-en-Provence

  • Description:

    • Set in the heart of Aix's pedestrian shopping zone, this likeable restaurant has a Provençal ambience created by bordeaux-colored banquettes, salmon-colored walls, and tables, each shaded by an enormous linden tree. The menu features a succulent array of a dozen grills, beefsteaks, and fresh fish, as well as a main course laced with saffron and the flavors of the sea, a marmite (stewpot) de la mer. Also appealing is house-made foie gras of duckling, a kind of pâté made from beef and Provençal herbs known as caillette de province, and such desserts as a fondant au chocolat. The wine list features dozens of vintages, many of them esoteric bottles from the region.
