This innovative restaurant is a few steps from Villa Gallici in an elegant neighborhood that most visitors reach by taxi. The Provençal villa has an octagonal reception area and several dining rooms. The stylish, seasonal dishes highlight the flavors of Provence. A stellar example of the innovative cuisine is an appetizer of mousseline of potatoes with sea urchins and fish roe. An elegant dish is braised sea wolf with crisp fried shallots and a "cappuccino" of spicy Spanish sausages. Delightful rack of suckling lamb is stuffed with carrots and chick peas and served under an herb-flavored pastry crust. For dessert, try multilayered sugar cookies with hazelnut and vanilla-flavored cream sauce and thin slices of white chocolate, or a "celebration" of Provençal figs -- an artfully arranged platter containing a galette, tart, parfait, and sorbet.
