Located in the tony Hotel de l'Europe, one of Amsterdam's finest restaurants derives its reputation from French chef Jean-Jacques Menanteau's Michelin-starred cuisine coupled with superb service. It's quite formal, especially by Amsterdam standards. Crystal chandeliers, elaborate moldings, crisp linens, fresh flower bouquets, and picture-frame windows with Amstel River views typify this classically grand establishment. A meal here is an exercise in refinement, aided by diligent and discreet waitstaff. Respectable attire (jackets for men) is required. If your budget can't quite compete with that of the royalty and showbiz stars who dine here, try the three-course middagmenu (lunch menu), or the evening menu du théâtre (theater menu), both of which make fine dining more affordable. The appetizer menu includes foie gras, smoked eel with dill, and marinated sweetbreads of lamb with salad. Choices for main courses include halibut filet with caper sauce or filet of veal with leek sauce. There's a grand piano, the source of the soft music that plays every evening.
