- This popular fusion restaurant is a relatively new addition to Amsterdam's eateries, having opened in 1998. Just to prove its commitment to the fusion principle, even the interior is a mishmash of new and old, blended together nicely to create a memorable dining experience. The menu combines Eastern and Western influences to good effect and this restaurant is billed as Demi-veg, which indicates a concentration on fish and vegetarian dishes. Add to this a nice wine list, and the final result is a restaurant well worth visiting. Fusion isn't for everybody, but you'll never know unless you try it.
