The salamander was the symbol of Renaissance king François I. In this formal, elegant restaurant, you'll see portraits of and references to that cunning strategist everywhere. Beneath massive sculpted ceiling beams, beside a large wooden fireplace, you'll enjoy the most impeccable service and best food in town. Shining examples include filet of red snapper in lime-flavored cream sauce, crayfish in various presentations, scallops in mushroom cream sauce, roasted turbot with Béarnaise sauce, and squid stuffed with crayfish and served with shellfish-flavored cream sauce. The restaurant is in a hotel but not owned by the hostelry.
