These are all quite high class outfits and very often adapt their cooking to western tastes. In my opinion - as a resident of almost 20 years in this country - there often are more authetical tastes available at simpler restaurants and at markets. It may well be an idea to explore this road by offering your help to those kitchens and learn by doing.
