I agree with Francisco, and I'd also add you should go before 10am. The downside is then most living statues haven't arrived yet, and the birds and flower stalls are just starting to open...
Another option would be visiting Barcelona in the low season: november, december (except between Christmas and New Years Eve), and january to march.

Las Ramblas is always busy, but specially on Friday and Saturday. Try to visit that place from Monday to Thursday, in those days you'll find less people.
