Run by rising chef Jereme Leung, this second Whampoa Club follows in the successful footsteps of its sister restaurant in Shanghai, much lauded for its inventive Shanghainese cuisine. This time, Leung focuses on bringing a modern interpretation to the cuisines of Beijing and Shandong, and he pulls it off flawlessly. Highlights from his tasting menus include his bean curd and vegetable roll with foie gras terrine, his oven-baked black cod (which made its debut in Shanghai and is one of the restaurant's best-selling dishes), and his Beijing-style fermented bean paste and pork with handmade noodles. Equally enticing is the setting -- the dining room, done in shades of white, blue, and black, sits underneath a glass-bottomed goldfish pond within a traditional Chinese courtyard. One downside is that eating here can be quite pricey.
