In fact, on Sunday afternoons drinking vermouth is rather an institution in the Spanish capital. Many madrileños enjoy an afternoon glass of vermouth at a sidewalk café or else go to a bar with a group of friends in the early evening for it.
Vermouth is typically served straight in a small glass, but it can also be garnished with a slice of lemon or mixed with soda. Many bars and cafes offer vermouth on tap in addition to their beer, but every establishment in the city has at least one bottle of vermouth on hand. Both red and white vermouth are available, but the red variety is more likely to be served straight while the white variety is mixed into a cocktail.

Are there any local or regional distilleries that I should be look for?
I don’t believe Madrid produces vermouth, just enjoys it!
