Most Chinese fast food is greasy street food, soaked in oil and largely unhealthy. You'll find it at most convenience stores or in small street stalls. For the casual tourists, these snacks are relatively safe.

Chinese meals in the home are usually quite large and always have a staple (rice or noodles) meat, and a vegetable or two. Everyone shares and they eat with chopsticks.
Steamed foods are also common, especially in Shanghai and in the South of China. Steamed dumplings containing meat and vegetable as well as seafood are the most common.
Noodle-based dishes are more common in the north, but are still available in Shanghai. Usually they have a smattering of vegetables and meat for flavor.
Most Chinese food isn't chopped exactly to mouth-sized bits. This makes eating with sticks difficult, especially since de-boneing isn't common. Be prepared to spit out the bone or stringey bits.
Set meals are common in China. You'll often get a meal like this in local cafeterias or specials at bars and restaurants. They contain a staple, two vegetables and a meat dish. Strangely, most meal deals don't include drinks.
Eggs are extremely common in China, and you'll find the tea-soaked and vinegar-soaked eggs unique. They are also a common after-dinner treat.
Meat, usually only arriving in one portion per meal (in homes) will be hard to eat. It's okay to spit on the table in most places (and they consider this more polite than sticking your fingers in your mouth or spitting into a napkin).
The Chinese brag about their food all the time, and are especially proud of the range of foods available from around the country. Spicy from sichuan, breads from the north and fish from the south are all popular.
Jiaozi, or dumplings, are a tasty treat available around China, and always a traveler's favorite!
