When the Virgin appeared in the Huancayo, Peru with a child in her arms she was received by an amiable family who took her in and gave her a bed in which to sleep. As a thank you the Virgin prepared a dish, the recipe was unknown....but this is legend and we should give thanks as the resulting dish was and remains to this day as papas a la huancaina.Inspired by this tale from the Peruvian highlands, chef Andrés Cáceres, opened up a popular haunt by the same name in the outlying town of Chia. Circumstances changed and to our benefit he moved to La Macarena in Bogota. Ideally located within Bogota's well-healed bohemia, Huancaina Gourmet offers much in the way of quality Peruvian fodder at reasonable prices.
