Foodies might disagree on which is the very best restaurant in Bologna, but this upscale choice is always at or near the top of everyone's list. It has drawn a faithful following for decades; in past years, it has hosted Einstein, Hitchcock, and Toscanini (not at the same time). "The Parrot," still going strong, is on the ground floor of a Gothic mansion across from the 14th-century Merchants' Loggia (a short walk from the leaning towers). Start off with lasagne verde al forno (baked lasagna that gets its green color from minced spinach). For the main course, try the specialty breast of guinea fowl with a white grape sauce. The menu also features some low-calorie offerings.
