- Right in the center of the restaurant district, this the Parlement des Graves offers a simple décor of white stone and gentle colors. It opened in 1994 and quickly developed into one of the most popular in town. Its menu displays regional dishes such as veal sweetbreads and prawns fried in olive oil with lime, or the platter of mixed grilled fish dressed with lemon and oil, all prepared in the chef's inimitable style. The wine list contains such prestigious names as a 1982 Pape Clément and a 1987 Yquem Sauternes.
