• Opened by talented expatriates from the French mainland, this spot is the best and most posh restaurant on Terre-de-Haut, with a suave sense of style that's head and shoulders above most of the competition. Its walls are covered with paintings, and at least some of its surfaces are accented with art objects. Menu items combine local ingredients with creative flair and precepts of classical French cuisine, including tuna Kurasawa (sushi-quality tuna lightly seared, raw in the center, served with spices and algae, and named in honor of the Japanese film director), a brochette of chicken with soya and curry, magret of duckling with passion-fruit sauce, and smoked swordfish.
