Description:
This restaurant has the best green credentials in Sussex. Its chefs seek the very best "organic, free range, and biodynamic" ingredients they can find, most of their foodstuff coming from a 56km (35-mile) radius of Brighton Beach. That means that fresh fish and shellfish are their strong selling points. True to their green philosophy, they keep the decor rather simple -- wooden furniture and floors. Their location is under one of the arches of the Brighton Promenade close to the beach.
Their cooking is straightforward and honest, as evoked by such starters as beet soufflé or pan-roasted quail with wilted greens. Their classic, well-prepared cookery is also well represented by such mains as pan-fried guinea fowl breast with chestnuts or their pan-seared loin of venison with celeriac and a truffle purée. The selection of fresh oysters is the best in town. "Puds" are sometimes startlingly original -- ever had a Jerusalem artichoke and thyme crème brûlée?
