  Capella Pedregal boasts two great dining experiences: the cliff-side El Farallon, and their signature restaurant Don Manuel's. While the former specializes in romantic atmosphere and market-style seafood, the latter features warm, old-world hacienda-style ambiance and beautifully prepared Mexican cuisine. The concept for Don Manuel's is a comfortable, old fashioned (yet exquisitely executed) fine-dining experience, revolving around the large, open kitchen (Su Cocina). The restaurant is open for breakfast, lunch, and dinner, with each meal featuring its own distinctive menu. The seafood is local, the produce is organic, and the staff is gracious and welcoming. For breakfast, served buffet/market style in Su Cocina, try delicious specialties like warm donuts with chocolate and passion fruit sauce, spiced pecan waffles with mango butter and piloncillo syrup, and brioche french toast with toasted coconut and coconut syrup. The lunch menu largely features salads and ceviches, while the dinner menu has extensive steak and seafood options like the 8 oz. filet mignon with English peas and squach blossom ragout, roasted potatoes, and mole, or the macadamia crusted sea bass with Miraflores baby vegetables and aged sheep cheese broth.
