most of them are yes because it is a normal day for trading here

I think you'll find most open, it's the beginning of the working week here in Egypt, some Christian shop owners may close. The business weekend in Egypt is Friday and Saturday but the government weekend in Thursday and Friday :-)

You'll find plenty to entertain you in the Khan any day of the week :-)

Some Shops like jewelery & handmade pottery are closed in sundays,
but there are some exceptions of course :P
in general, you will find the place crowded like every other day :)
