The best choice for dining at the Kicking Horse Mountain Resort base is this friendly small restaurant (in summer, with a great patio) in the Copper Horse Lodge. Though the dining room features crystal, linen, and candlelight, Corks is more of a casual bistro with a small, though varied menu. You could do far worse than settle for a salad, such as adobe-rubbed roast chicken salad with cucumber slaw, watermelon, and peach chutney, though that means you'd miss out on the excellent thin-crust pizzas and main courses such as wild Coho salmon with French lentil pilaf and orange fennel broth. The wine list has an intriguing selection of New World wines.
