If you are one of the many people that gets bored laying on the beach, get away from the hotel and engage in some active sightseeing excursions. That way, you'll get some exercise
see the sights.
Tours to see Mayan ruins, like Chichen Itza, Coba, or Tulum, involve a lot of walking and, at the ruins of Coba, you can climb the pyramid or ride bikes through the park. Day trips to the nature preserve of Isla Contoy, or to the popular eco-parks of Xcaret and Xel-Ha also involve lots of walking, but you will also have the option to swim or snorkel.
Scuba diving tours, zip-lining through the jungle, and swimming in cenotes (sink holes) are also great ways to stay active while on vacation.
