JW Marriott's signature restaurant Gustino offers romantic Italian dining unsurpassed in Cancún. The exquisite dining room includes a gorgeous centerpiece candle display, floor-to-ceiling windows looking out to a lazy man-made lagoon and the beach beyond, and live saxophone. For an antipasto, I recommend the unusual pear carpaccio with parmesan nuggets and caramelized grapes, or the sautéed shrimp in a white wine sauce with capers and roasted celery crouton. The warm tossed spinach salad is one of the best I've ever tasted, topped with pancetta, mushrooms, sun-dried tomatoes, and walnuts. Expertly prepared main dishes include open lasagna with lobster and black olives, and seafood linguine tossed in a garlic white wine sauce. The menu, which changes seasonally, features other homemade pastas and succulent steak and seafood selections. Gustino boasts an open kitchen and wine cellar with an excellent variety of international grapes. Service is impeccable.
