Description:
The culinary traditions of the late Mère Besson, who opened her restaurant in the 1930s, endure in one of Cannes's favorite dining spots. The specialties are prepared with respect for Provençal traditions. Most delectable is estouffade Provençal (beef braised with red wine and rich stock flavored with garlic, onions, herbs, and mushrooms). Every Friday, you can sample a platter with codfish, fresh vegetables, and dollops of the famous garlic mayonnaise (aioli) of Provence. Other specialties are fish soup, bourride Provençale (thick fish-and-vegetable stew), and roasted rack of lamb with mint.
