• The best Chinese and Asian food in this tiny archipelago nation is served here at the chic Raffles Resort. Many of the dishes have flavors familiar to Singaporeans. With these Far East flavors, regional ingredients are often used as well, making for some intriguing combinations. It's a true East-meets-West kitchen. The Chinese "tapas" alone would make a meal unto themselves -- coconut seafood tom yam soup, pan-seared marinated duck with hoisin sauce in rice-paper rolls, or delectable soft-shell crab and lobster wontons. The barracuda served comes from the Caribbean, but the red chili curry paste is from the Pacific. Lemon grass-crusted lamb chops are another celestial delight. Opt for a beach-bordering table where candles flicker in the trade winds at the island's most romantic spot.
