- No discussion about dining in Northern Thailand should begin without first paying homage to the delicious and inexpensive local fare, but fusion food can in some cases surpass regional food in taste. In the hand of a skilled chef, a tried and true regional favourite can be lifted to the exceptional. Take the Italian favourite Linguine de Mare (Linguine with seafood), add a little Thai basil and some local chili and you have a delicious alternative.
