- Founded by former Bin 36 chef Sean Sanders, Browntrout in Lincoln Square is innovating green cuisine. They grow all of their herbs on their rooftop garden and use sustainably grown produce as much as possible. Even their fish comes from natural waters or sustainable farms, and all of the meat is grass-fed and free-range. Dining here is comfortable and casual, and dishes like Parisienne gnocchi with squash puree, chestnuts, Brussels sprouts, brown butter, sage, sherry, and puffed wild rice, you might not want to leave. Come back on another day and experience Browntrout's great specials like Wednesday's "you choose" three-course tasting menu for just $35.
