Description:
Towering high above the Chicago Stock Exchange, Everest is an oasis of fine-dining civility, a place where you can taste the creations of one of Chicago's top chefs while enjoying one of the city's top views. The decor isn't as impressive as the food (it looks like a high-end corporate dining room), but the focus here is the view, the food, and you (the service team seamlessly anticipates your every need). Chef Jean Joho draws inspiration from the earthy cuisine of his native Alsace, and mixes what he calls "noble" and "simple" ingredients, such as caviar or foie gras, with potatoes or turnips. While the menu changes frequently, the salmon soufflé and cream-of-Alsace-cabbage soup with smoked sturgeon and caviar are popular appetizers; signature entrees include roasted Maine lobster in Alsace Gewürztraminer butter and ginger, and poached tenderloin of beef cooked pot-au-feu style and served with horseradish cream. Desserts are suitably sumptuous, and the wine list offers some wonderful American and Alsatian selections. Befitting a restaurant that's been in business for a few decades, service is smooth and polished.

Message from Everest
This, the pinnacle of Chef-Proprietor Jean Joho's restaurant collections, is recognized worldwide for its superb cuisine and unique wine collection. In this spectacular setting with the glittering city spread out 40 stories below, you will experience a caliber of personal service and a level of culinary excellence that define "world-class." Drawing on an array of the finest foodstuffs from his native Alsace and around the world, much of it flown in especially for the restaurant, you are likely to marvel at creations you may never encounter again, but are certain to remember for a long time to come. The world's toughest critics call Everest "spectacular in every way," the city's "most romantic restaurant," and the "best Chicago restaurant for business dining."
