Prodigious talent and imagination go into shaping the cuisine. Unusual and tasty main courses include breast of guinea fowl stuffed with herbs or medallions of venison with savoy cabbage and a sweet-corn potato rösti (hash brown potatoes). Also delectable are a galantine of quail with pigeon breast served with pistachios in aspic, or else a filet of lamb with spinach and a tomato ragout.
