Although there are numerous restaurants serving local, traditional cuisine in Copenhagen, they are not always the easiest to find, and are often located in unassuming basements known only to faithful regulars. With the recent international interest in new Nordic cuisine, however, newer places have opened up that allow visitors a smoother introduction into the Danish kitchen.
With its stunning use of only Scandinavian ingredients, award-winning restaurant Noma would seem an obvious choice; yet in addition to its out-of-range prices and long wait list for a table, the imaginative menus here are hardly a true picture of traditional Danish meals. Instead we have chosen the somewhat less expensive Scandinavian kitchen of Frederiks Have, for its approachability, pretty parkside location and romantic setting.
The oldest of Copenhagen's traditional eateries are its lunch cafes, small, often quite dark premises with skilled smørrebrød chefs preparing open sandwiches, frikadelle meatballs and pork cuts. We recommend Rabes Have, with its historic ambience and idyllic courtyard. Other such places include Frederiksberg's Sans Souci and old timers Cafe Petersborg, Kanalcafeen and Slotskælderen hos Gitte Kik.
Traditional dishes herring, pork and the miniature chicken tarts known as tartelleter are given a contemporary makeover at bright new restaurants like Paustian, Aamanns Etablissement and most recently Madklubben Tivoli: Expect to pay a little more than at the more old-fashioned spots, but with a much fresher outlook.
Copenhagen's only restaurant celebrating the cuisine and produce of Danish-owned island Bornholm is Restaurant Koefoed, a pearl of a find hidden on a side street from Store Kongensgade.
