Two centuries earlier the British fleet leveled the harborfront here, but the British have returned, this time to design one of the most gorgeous waterside settings for dining in Copenhagen. The chefs take superb and market-fresh ingredients to the limits of their innate possibilities, without relying on culinary artifice. Some of their most sublime concoctions are braised oxtail with sweetbreads, blackberries, and schnapps of wild berries; braised pork shank with truffle oil and almonds; or saddle of rabbit poached in Calvados with stewed apples. Their desserts are worthy of awards, especially their chocolate layer cake with nutmeg ice cream, cloudberries from the Arctic, and burnt almonds, or their baked citrus cake with caramelized lemon ice cream, plus licorice and vanilla cream.
