  • Gastón Acurio has made a name for himself as Peru's top chef and expert in both traditional and modern interpretations of Peruvian cuisine. Chicha, Acurio's only establishment in Cusco, can be found in the lazy Plaza Regocijo, and is a genuine foodie experience not to be missed. True to his reputation, the menu at Chicha covers Peruvian standards like aji de gallina (shredded hen served in a spicy cream sauce) and anticuchos (skewered cow heart) as well as some exciting fusions. Lomo saltado, a Peruvian classic of stir fried beef, onions, tomatoes and French fries is given the twist of being served within a spring roll. For the more adventurous diners, Acurio offers a delectably eclectic dish of guinea pig stuffed raviolis in a red wine sauce. The cocktail list is equally as novel and offers a wide selection of Pisco (Peru's very own liquor) mixed and blended with an array of local plants and fruits like coca, eucalyptus, maracuyá and maca. The restaurant is both elegant and spacious; high vaulted ceilings and an open air kitchen give the locale a cavernous though not romantic feel. The wait staff are informative and display a great attention to detail. Be sure to try a glass of chicha, a traditional Andean alcoholic beverage brewed from corn, and the restaurants' namesake. Open all week from 12pm until 11pm.
