• Larkburger is Colorado's answer to the In-N-Out Burger – that is, it's good enough that it has managed to build a local cult despite the fact that its a chain. Cooking pretty much everything in truffle oil probably has something to do with that, as does Larkburger's almost pathological commitment to making sure that theirs will be the most environmentally friendly burger you'll ever eat. Every location is wind-powered, recycles their cooking oil as engine fuel, uses nothing but biodegradable packaging, and constructs the building's interior out of wood salvaged from urban forests in northern California. The food's not bad either, especially the truffle and Parmesan fries.
