Spectrum on One features eight innovative kitchens and distinct dining areas that let you take a gastronomic tour across Thailand, China, Japan, India, Europe, and Arabia. The result is a menu as ambitious as any you'll find, and I've chosen to highlight just a few. From the Indian menu, I love the Kashmiri roganjosh, tender lamb cooked in a spicy Kashmiri gravy. For Chinese, the succulent whole-roasted Peking duck is the obvious favorite. Any of the spicy green curry dishes make for an excellent meal on the Thai menu, and the black Angus beef tournedos with seared foie gras is my pick on the European side. It helps if your dinner partners are as adventurous as you, allowing you to mix and match plates across the culinary spectrum. This upscale restaurant really is one of Dubai's most interesting, and I strongly recommend you take a tour of the various open kitchens before settling into your meal. The excellent Friday brunch includes free flowing Moet & Chandon champagne.
