Anly restrictions, regarding those of Jewish faith?

To answer your question there are no restrictions to people of any faith to enter Dubai but Israelis (people with Israeli Passports) are not allowed to enter. So if the travel document you are using does not indicate that you are Israeli or Jewish, then you will have no problem.
If your worried about the general attitude of the people, Don't! Dubai is a highly multicultural city and the nationals form a meager percentage of the whole population. In fact, chances are you'll hardly come in contact with the Emiratis, save the officials.
As for practicing your religion, although the UAE is an Islamic country, the locals are peace loving and very open to every religion as long as you do not try to convince others to follow your beliefs. In fact there are Churches and Temples in the UAE but no Synagogues, but poeple of other religions can have religious meetings in private. Nobody will bother them as long as they are not publicized.

That said, not mean if you one in Dubai with other nationality of Jewish origin, will not allowed to practice their faith. In your case got to be in secret though so not to raise any problem.
Yemen is the only Arab country in the gulf that Jewish able to stay upto present time, very few of them. I have seen Jewish openly walking in the Capital Sanaa, get some basic stuff and then going back to their village. No one even bother them.
