Its food relies on simple preparation, inventive flavor combinations, and tons of fresh, local ingredients: Try the smoked lamb carpaccio crusted in rosemary with arugula and apple salad and dijon aioli, say, or chili-rubbed grilled beef rib-eye, aged 28 days, with smoked tomato and goat cheese tortellini and creamed spinach. Think of it, perhaps, as haute comfort food -- some of the best you'll find anywhere.
