Florence is the home of the famous Bistecca alla Fiorentina, Vin Santo and Trippa alla Fioretina, but there are many more things to try. Viniano di Parte Guelfa tantalizes your taste buds with the freshness of Tuscan panini. Try the speck, brie and sun-dried tomato panino, it will melt in your mouth. A traditional meal can be had at il Lorenzaccio. Located in Piazza della Signoria, it has been around since the early 1960s. The staff serves you a meal that you will never forget.
There are many small little places that will make you feel you are actually in the dining room of a local family. Pangies Bistrot is just that. Run by a local family with their two daughters, it is a place that really wakens the soul. All the food for the day is cooked each day, freshly made bread and fegatino are scrumptious to snack on as an appetizer. Some more of the elegant dining can be had at Cantina Barbagianni and Riflessi Ristorante. Each serves dishes traditional to the season. For more of an economical steal with the quality of food to match, Trattoria da Giorgio is where I would recommend. Another family ran business where you can find freshly made dishes each day with a touch of home.
Florence is full of restaurants, make sure you steer clear of the touristy ones and head to the more authentic and traditional. The food in Florence should be the highlight of your trip though this culinary metropolis. Late night kabobs, afternoon gelato, and six o'clock aperitif will give you plenty of reasons to check out more than enough great spots, even on the shortest of trips.
