According to locals, the key to Hobart cuisine is to seek out anything and everything Tasmanian. Look for restaurants where you'll find culinary fusion of traditional Australian seafood dishes with more exotic flavors. At the beginning of your trip, start with classical Australian food just to get your feet under you.
