There are some places in Taxim. you should ask for "meyhane" or "fasıl" . Those kind of places usually have programs on friday and saturday night. If you want to have traditional Turkish fun you should also eat and drink Turkish stuff. Like "rakı" for drink and "meze"s for food. Meze is a series of food that you could eat with rakı. For main dishes you can have a "fish".

When we say traditional cuisine there are so many types...

*kebab
*fish
*meyhane (tavern where there is sometimes music)
*Ottoman / traditional home cooking

Based on this configuration, fish and kebab restaurants are mostly family or large group oriented places. Not that you do not see any couples eating there, but the atmosphere is typically one that allows for a very long dinner. Yesterday myself was a fish restaurant amongst family and ours lasted for about 4 and a half hours...,

Among fish restaurants I might say that Set Balık in Kirecburnu (between Tarabya and Sarıyer on the European Bospborus) is one that is most preferred by the younger generation for birthdays etc, but I doubt a fish or a kebab restaurant atmosphere is what you are really looking for.

Same with kebab.... Although Venge would then be the hippest. I know many young group of (men mostly) go there to watch a soccer game or eat kebab during Ramadan or wish farewell to a departing friend...

Next in line were the taverns. I think this is what you are looking for. Lots of meze and raki is nowadays the key to the start of all long and drunk nights for the clubbers.
Meyhanes are not just in Taksim. There are many all around the city, but the hip ones are in Asmalimescit. You would do well to read the following to understand better this region:

Finally classic Ottoman cuisine restaurants are mostly serious places with a hymn of classical Turkish music playing at the back. But, places around Taksim would still be hipper I guess. Although when you say Ottoman cuisine I think of Asitane, Pandelli, Topaz and Konyalı. And, these really are very wellknown, famous, very good restaurant aslthough you have to dress maybe more smart casual...

If you are asking about hip and trendy I advise Park Samdan www.parksamdan.com which has very good Turkish Cuisine and Hünkar a traditional Turkish Cuisine restaurant in Nisantası http://www.hunkar1950.com/.
