Jerk is heavily seasoned meat that is prepared over an open wood fire. The finished product, a favourite with locals and visitors alike, is lightly flavoured with smoke. Make sure to have a couple of cold beverages handy to minimize the effect of the pepper. Traditional entertainment by local performers will provide that authentic Jamaican atmosphere.
