- French Chef John Correa has combined his French mastery of sauces with local seafood. Mutton Snapper in Pesto and Champagne or a rare Hog Snapper with Red Pepper Zabaglione are a hit with the crowd. Fresh fish is what everyone frequents the restaurant for. Chicken, lamb, pork and beef are also served. Prices are steep but the experience is worth it.
