Star chef Norman Van Aken abandoned ship in Miami in favor of a swank new resort in Key West, and it's only appropriate. Van Aken got his start at Louie's Backyard and now he returns to his roots with his signature Floribbean cuisine that kicks Keys cuisines up a few price notches. Tavern and Town are two separate eateries within a bilevel space -- Van Aken calls it a hyphenated restaurant, with Tavern featuring tapas and small plates and Town a more world class dining experience, but both equally good -- and pricey. An open theater kitchen shows action, but the real show is on your plate. At Tavern, try the picadillo empanadas with pimento and tomato compote and cumin line crema, or a Key West yellowtail with garlicky mashed potatoes with hearts of palm slaw. Over at Town, try Black grouper in a Japanese konbu broth and Mongolian barbecued veal chop, which are a far cry from Duval Street's chicken fingers and conch fritters. But if it's a splurge you are looking for, there's no better place in Key West to do so.
