He cooks light, modern European food with intense flavors; try pan-fried veal with oyster mushrooms; duck liver with rhubarb compote and apples; risotto with braised oxtail and mixed mushrooms. Desserts are to die for, appearing on your table as degustation treats – imagine tiramisu laced with Tia Maria and gingerbread; lemon madeleines; choc brownies with blackberry puree; and vanilla, pineapple & pistachio milk balls.
