- Senses is an ultra fine-dining restaurant. It's a temple of exquisite and experimental flavors with varying textures and tastes. You won't find any other restaurant in the city quite like it – so exclusive and discreet. Senses is in tune with today's tastes – the only restaurant in town to do modern Australian cuisine (it comes at a price of course). Chef Michael Elfwing is keen on properly sourced ingredients and all the meat and poultry have the right pedigree. His menus are a mind-blowing gourmet trip of exciting tastes and textures. Each dish is thoughtfully presented and immaculately prepared. Imagine the likes of Smoking Allowed (Tasmanian ocean trout smoked right in front of you); beetroot and scallop salad; Hokkaido scallops with fennel; and sablefish with razor clams and calamari; luscious Dorper lamb steak; and apricot sorbet with edible flowers. Senses has an unfussy, monochrome decor with just ten tables.It seems quite sparse but there's, undoubtedly, an air of indulgence and luxury.
