The Post Hotel dining room actual outdates the hotel -- it's been a destination for decades, even when the top-notch hotel was more a motel -- and, in fact, is the core reason the Post made the Relais & Chateaux list in recent years. But its accolades don't stop there. Wine Spectator magazine made it one of only four restaurants in Canada to win its Grand Award for its exhaustively fantastic 30,000-bottle wine cellar (1,800 are on the wine list at any given time); Gourmet magazine recently called the dining room the "third best" rustic culinary retreat on earth. A meal here, in the original log building, is an experience hard to match; it's cozy, with a roaring fireplace, the service is unbeatable, and the food, well, hardly needs my endorsement -- Google the Post's dining room and let your mouth water at the praise handed out by taste buds far more practiced and sophisticated than mine. The menu focuses on flavorful meat and seafood, with impressive desserts a worthy follow-up. Suffice to say that, for the true foodie in the crowd, the Post simply shouldn't be missed. If there's a restaurant in the Rockies you'll regret passing up, this is the one.
