Located as it is in the Southwestern part of the United States, you'd think Las Vegas would be able to do Mexican food better than it does. While there are a few standouts in town, the list of really good south-of-the-border eateries can be counted on one hand. Well, maybe two now with the addition of Diablo's Cantina.
Located right on the Strip with some fun people-watching views, Diablo's is a dark pueblo of a space serving up traditional Mexican fare at prices that will remind you that eating in Vegas doesn't need to be a bank-draining occasion. The menu, while not as mind-boggling expansive as similar restaurants, certainly covers all the basics with burritos, tacos, quesadillas, enchiladas, and fajitas, plus some sandwiches, burgers, and salads thrown in for those who need a little less spice in their life. Standouts include the Club Quesadilla, three-layers of steak, pulled-pork, and guacamole, and the tender steak fajitas, served sizzling -- the way God intended them to be.
