A huge candleholder ("candelabro" in Spanish) three metres tall welcomes the guests at the entrance of this fancy restaurant, where the traditional Peruvian cuisine is renewed with the French cooking techniques, always respecting the original ingredients but sometimes offering some innovative touch. The chef, Eduardo Sernaqué, recommends for your first time here the grilled octopus with potatoes in pesto sauce; or maybe the pork fries at Andean barbecue style, or the 21-days-old suckling with loche (a local pumpkin) puree and green apples. This restaurant also offers every day a modern Peruvian cuisine buffet for lunch time, combining Peruvian recipes from all regions with some new modernized versions, and of course a section with fresh, instantly prepared ceviches. In addition to the large number of special dishes and the buffets, El Candelabro offers an excellent bar with exquisite drinks like the Apple Chilcano, a wide selection of international wines and the house creations "Candelabro Cranberry" and "Piña Colada Candelabro".
