- The in-house restaurant at Inspira Santa Marta Hotel is based on a Mediterranean brasserie concept – a relaxed, upscale setting exuding an understated cosmopolitan ambience. Refreshingly roomy with expansive pinewood flooring and furniture, the cultured organic look is deliberate and follows the hotel's underlying principals of environmental sustainability. The menu upholds the hotel's green credentials. Whenever possible, ingredients have been sourced locally and preferably through fair trade outlets. Fresh and healthy, several dishes are indicated as being prepared from biological produce such as the trilogy of stuffed vegetables served with yoghurt sauce. Surprises abound. The roasted triggerfish with herbs, olives, cherry tomato and olive oil bathed in sweet garlic sauce is a revelation. So too the pistachio encrusted lamb chops with whole grain mustard sauce. Wine choice is outstanding but perhaps the most gratifying of drinks is the water. The proceeds of every bottle ordered go towards building fresh water pumps in Africa.
