Each of the two dining rooms is outfitted with Bedouin colors, rich upholsteries, flickering candles, and belly-dancing music. You'll enjoy regional specialties that were once sampled only by cherished royal-family guests. If you wish, you can begin your meal with Moroccan tapas, including pigeon with spices and roasted almonds in a cinnamon-flavored pastry or baked baby eggplant with cumin-flavored shallots, even chargrilled king prawns. Main dish specialties include a slow-cooked whole lamb shoulder with apricots, figs, dates, and prunes served with a cinnamon-flavored couscous and sultanas. A tagine Djaj is chicken with preserved lemon, onion confit, saffron potatoes, and green olives. The chargrilled swordfish is a very special dish flavored with pomegranates, fresh mint, and cinnamon.
