Description:

  • Australian-born Brett Graham deserves his culinary acclaim. As befits a chef born down under, he subtly incorporates Asian staples such as shiso and soy into his cookery. He's not a fancy, prissy chef, but likes to gut a squid and other such horrors. No one makes better roasted scallops with licorice than he does. His ballotine of foie gras with a refreshing date purée is about the best version of this starter you are likely to have. Save room for his eggplant braised with miso and garlic, or his ravioli of chicken and morels in a white asparagus fondue. He's also skilled at fish, especially his monkfish roasted with fresh rosemary. For dessert, we'd recommend the date-and-vanilla tart.
